"We had a really bad problem with smelly drains.  Potato waste and starch can produce the most awful odours as well as hard-to-shift blockages.  Cromars is a multi-award winning Fish Restaurant and Take Away in one of Scotland’s most visited destinations, St Andrews.  Thousands of visitors from both the UK and abroad visit each year and we aim to give them the best experience possible.  Drain clearing lorries and vans outside the shop is not a good image and the risk of drain smell was not something we wished to have.  Our building is in the centre of town, the buildings and infrastructure are older, consequently, our drains are not as robust as we might prefer.

We had looked at various options, most of which were just too big for a busy kitchen and extremely costly as well.

We are also extremely proud to have been awarded several industry accolades.  This is a result of our environmentally friendly approach to everything we do from packaging to product and we wanted to keep it that way.

The Solution

We looked at a Peel Tech machine after being recommended to it by a fellow Fish and Chip Shop owner.  We liked its compact size.  It was extremely easy to set up and operate and created minimal mess.  It doesn’t require additional operation time – very important in a shop as busy as ours.  It only needs emptied once or twice a day and the waste is now a resource in its own right as it is easy to convert into anaerobic digestate.

The Result

We are delighted with it as we have no more waste clogging the drains and no more smell from the starchy waste.   We love the fact that the water used to wash the waste is so clean that it can be recycled and that the waste by-product can be used for animal feed. It is in total keeping with our environmental aims.  And no risk of contravention of legislation and the attendant fines associated.

We have recommended this piece of equipment to several of our fellow catering colleagues.  It’s a must if you trade ethically and with the environment in mind."
